Brinjal polichathu
Meen Pollichathu is a popular traditional delicacy from the South Indian state of Kerala, featuring fish coated in a spicy masala, wrapped in a banana leaf, and then pan-fried or grilled to perfection. The name itself translates to "roasted fish" in Malayalam. Insteadof fish i replace brinjal in this recipe

- Big brinjal 🍆 1
- Onion 🧅 1
- Tomato 🍅 1
- Curry leaves 🍃
- Gingergarlic paste 1 tsp
- Turmeric powder 1/2 tsp
- Chilli powder 🌶️ 2 tsp
- Garam masala 1 tsp
- Salt to taste

Instructions

- Heat pan add oil fry onion & curry leaves
- onion becomes transparent add tomato ,turmeric powder ,salt & chilli powder saute for 2 mins Keep aside
- Take a plate add chilli powder,coriander powder,gingergarlic paste ,turmeric powder,salt and curd .MIx it
- Slice the brinjal into thin & apply the curd mix on both sides ,tawa fry for 2mins
- Take a banana leaf spread the onion toato paste first and brinjal . Again onion tomato paste
- Add coconut milk
- garnish with coriander leaves
- Fold the leaf and tie it
- Place the leaf in pan Close
